What You’ll Be Responsible For:

  • Setting and maintaining impeccable kitchen hygiene standards
  • Training and developing your chef team
  • Designing and implementing 7‑day menus aligned with the lodge’s food styling guide
  • Ensuring correct stock levels, rotation, and cost control
  • Managing all food orders, storerooms, fridges, and freezers
  • Overseeing presentation, freshness, and quality of all meals
  • Checking buffets and meal services across camps multiple times weekly
  • Leading creative bush banqueting, picnics, and drink stops
  • Maintaining proactive communication with managers, chefs, and suppliers
  • Ensuring disciplined, fair, and inspiring leadership
  • Managing special dietary requirements with care and precision
  • Upholding world‑class hospitality and service standards
  • Keeping accurate admin, personnel files, and costing documentation
  • Staying updated on culinary trends and lodge‑specific food expectations
